In the north of the Veneto region, far away from industrial mass-market Prosecco production, lies the historic wine-growing area of Breganze at the foot of the Asiago plateau. Right here, in an almost forgotten, wild hilly landscape, the visionary project Rarefratte – led by Cristian Moresco – brings the true, unvarnished terroir of Veneto back to life. On a tiny, highly limited area of just around 3 hectares, they craft wines that captivate with their immense energy and mineral tension.
Rarefratte's vineyards are situated on steep terraces that must be meticulously cultivated by hand. The absolute secret of this terroir is the soil: deeply shaped by dark volcanic basalt, glacial deposits, and calcareous rock. This volcanic treasure trove infuses the vines with an almost vibrant minerality, razor-sharp freshness, and a smoky-salty depth that is hard to find anywhere else in Italy.
Cristian Moresco is no ordinary winemaker – he is a savior of nearly extinct grape varieties. While the modern Veneto is dominated by international varieties and uniform yields, Rarefratte has dedicated itself to preserving the region's liquid heritage. Cristian tracks down centuries-old, autochthonous (native) grape varieties in old, overgrown vineyards, propagates them with utmost care, and coaxes them back into the bottle.
In the vineyard, the golden rule of absolute respect for nature applies. Rarefratte works strictly organically, going far beyond minimum standards. Synthetic sprays, herbicides, or chemical fertilizers are rigorously banned. The vines grow amidst a wild biodiversity of herbs, wildflowers, and shrubs. Every single grape is hand-harvested in autumn and strictly sorted in the vineyard to ensure only the most energetic, high-quality fruit reaches the cellar.
In the Rarefratte cellar, the philosophy of "hands-off" winemaking reigns supreme. Cristian Moresco trusts nature and gives his wines the exact time they need to fully develop their headstrong character:
Native Yeasts Over Selected Yeasts: Fermentation begins exclusively spontaneously with wild, indigenous yeasts from the vineyard. This ensures an unadulterated, complex flavor profile that reflects the rugged volcanic terroir without filter.
No Filtration, No Fining: To preserve the full mouthfeel, fine texture, and living microorganisms in the wine, all of Rarefratte's wines are bottled entirely unfiltered and unfined. This results in a captivating haze and preserves pure vitality in the glass.
Minimal Sulfur (Zero Added): Thanks to extremely precise and clean cellar work, Rarefratte can almost completely forgo the use of sulfur. Many of their wines are bottled with zero added sulfites, making them incredibly digestible, juicy, and expressive.
💡 Pure Terroir in the Glass: Cristian consciously avoids new oak. The wines age in neutral vessels such as used barrels, stainless steel tanks, or clay amphorae, ensuring that the salty volcanic minerality and delicate fruit remain at the center of attention.

The White Acid Sensation – Vespaiolo: The most characteristic white grape variety of the Breganze region. At Rarefratte, it is often crafted with skin contact (as an orange wine). The result is a wine with vibrant, citric acidity, a gripping tannic structure, and deep, salty volcanic minerality.
